
It’s Wanderfood Wednesday, and look what I just found! A photo from the little restaurant on the streets of Caye Caulker, Belize, where I had my first meal. And, while I opted out of the cow foot soup, I did have a lovely meal of stewed shrimp with rice and fried plantains smothered with Marie Sharps fiery hot sauce!

We just loved Vern’s restaurant, off the main street near the school/residential area. I’m not sure where the dog that sat underneath our table during dinner went, though. He must be camera shy!

I need to go back to Belize so I can stock up on that delicious hot sauce. And, who knows, maybe next time I’ll be brave enough to try cow foot soup?

My dad says his mother used to make cow’s foot jell-o when he was a boy, and he loved it — complete with the smell of scorched cattle hair as my grandmother roasted the cow’s foot over the gas burner.
One Thanksgiving, my mom and I tried to recreate my dad’s childhood memory, but that’s a long story for another day…!
I have seen this on the menus in San Pedro Belize. Plan to try it in September when I am back there!
